Ingredients
- 2 c. whole wheat flour
- 1/2 c. brown rice flour
- 2 teaspoon low sodium baking pwdr (Featherweight brand)
- 1 teaspoon baking soda
- 2 teaspoon cinnamon
- 1/2 teaspoon grnd cloves
- 1/2 teaspoon grnd ginger
- 2 c. mashed bananas, really ripe
- 2/3 c. apple juice concentrate, defrost from frzn
- 1 teaspoon coffee substitute
- 2 teaspoon vanilla
- 3 egg whites
- 1/2 teaspoon cream of tartar
- 6 ounce nonfat cottage cheese or possibly dry curd, rinsed in cheesecloth to remove salt
- 1/4 c. nonfat plain yogurt
- 4 T cherry-orange or possibly pineapple apricot preserves (or possibly other preserves)
- 1/4 teaspoon vanilla
- 1/4 teaspoon rum extract
- 2 T apple juice concentrate (defrosted from frzn)
