Tomato, Sweetcorn And Basil Soup With Pesto Croutons Recipe

Ingredients

  • 3 x Ears corn or possibly 340g/12oz frzn, kernels defrosted sweetcorn
  • 1 lrg Onion, minced
  • 3 x Garlic cloves, minced
  • 3 Tbsp. Extra virgin olive oil
  • 6 x Fresh anchovy fillets, roughly minced (optional, but a good idea)
  • 2 x 400 g tins minced tomatoes
  • 2 Tbsp. Tomato puree
  •     Bouquet garni of thyme, bay leaf and parsely sprigs tied with string
  • 1 lt Water or possibly stock
  • 1 handf basil leaves
  •     Salt and pepper
  • 1/2 stk French bread, sliced into rounds about 1cm/ 1/2" thick
