Buche De Noel (yule Log) Recipe

Ingredients

  • 4 lrg Large eggs, separated, plus 2 egg whites, at room temperature 1/2
  • 1 c. Granulated sugar
  • 1 Tbsp. Vanilla
  • 1/8 tsp Salt
  • 1/4 tsp Cream of tartar
  • 1/2 c. Sifted all-purpose flour
  • 1/4 c. Sifted unsweetened cocoa pwdr plus additional sifted cocoa pwdr for dusting the cake
  • 6 x Egg yolks
  • 2/3 c. Granulated sugar
  • 1/4 c. Water
  • 3 stk unsalted butter, softened (1 1/2 c.)
  • 6 ounce Semisweet chocolate, melted and cooled
  • 1 Tbsp. Eau-de-vie de framboise
  •     Meringue Mushrooms, (recipe follows)
  • 2 Tbsp. Almond paste tinted with green food coloring
  •     Confectioners' sugar for sprinkling
