Ingredients

  • 1 bot red wine
  • 4 c. Thin soy sauce, or possibly 1 c. dark soy sauce
  •     Water
  • 1 whl duck
  • 12 slc Gingerroot, sliced
  • 1 head garlic, sliced in half
  • 1 bn Scallions
  • 5 x Star anise
  • 2 x Thai bird chilies
  • 2 x Cinnamon sticks
  • 1 x Orange, halved
  • 6 lrg Piece chinese rock sugar, or possibly 2 c. brown sugar
  • 2 lrg Potatoes, peeled and minced
  • 1 x Celeraic, peeled and minced
  • 1 x Daikon, peeled and minced
  • 2 x Yams, peeled and minced
