Ingredients

  • 1 bot clam juice
  • 1 med onion, minced
  • 2 x garlic cloves, smashed
  • 2 lrg mushrooms, sliced
  • 1 1/4 c. dry sherry
  • 1 3/4 c. water
  • 6 x peppercorns
  • 2 x bay leaves
  • 2 sprg thyme (1/2 tsp. dry)
  • 1/3 c. butter
  • 1/3 c. flour
  • 2 c. enriched fish stock (above)
  • 1 c. lowfat milk
  • 1 pkt lump crab meat, thawed and flaked (8 ounce. pkg.)
  • 2 1/2 c. lowfat milk
  • 3/4 c. heavy cream
  • 5 dsh Tabasco
  • 1 1/2 tsp salt
  • 8 ounce Brie cheese, divided: 6 ounces/2 ounces
  •     Chives, small amount, minced, for garnish
  •     Combine and bring to a boil. Reduce heat and simmer 30 min. Strain and
  •     reserve.
