- 750 gm chicken, cut into bite-size pcs
- 200 gm potatoes, cut into wedges
- 2 x tomatoes, quartered
- 1 sprg curry leaves
- 1 x pandan leaf, knotted
- 100 ml thick coconut lowfat milk
- 400 ml thin coconut lowfat milk
- 5 Tbsp. oil
- 6 x dry chillies, soaked
- 3 x fresh red chillies
- 1 stalk lemon grass, sliced finely
- 6 x shallots
- 3 clv garlic
- 1 Tbsp. coriander pwdr
- 1 tsp cumin pwdr ( jintan putih )
- 1/2 tsp fennel pwdr ( jintan manis )
- 1/2 tsp belacan granules
- 1 x star anise ( bunga lawang
- 2 x cloves ( bunga cengkih )
- 2 x cm piece cinnamon stick ( kulit kayu manis )
- 2 Tbsp. curry pwdr, make into a paste with a little thin coconut lowfat milk
- 1 Tbsp. salt
- 1 tsp chicken stock granules
- 1/2 tsp sugar
