Spring Vegetable Saute Recipe

Ingredients

  • 8 ounce baby Yukon gold or possibly small new potatoes
  • 16 x baby carrots peeled
  • 1 lb thin asparagus trimmed and cut into 1 1/2-inch pcs (3 c.)
  • 4 ounce sugar snap peas strings removed
  • 8 sm radishes
  •     trimmed and halved lengthwise
  • 1 Tbsp. extra virgin olive oil (orig was 3 tbsp)
  • 4 x scallions trimmed and cut into1-inch pcs
  • 10 ounce frzn fava beans thawed
  •     Or possibly baby lima beans
  • 2/3 c. vegetable broth
  • 1/4 c. minced fresh parsley
  • 1 Tbsp. fresh lemon juice (optional)
  • 1 1/2 tsp finely minced fresh tarragon
  • 3/4 tsp salt
  • 1/4 tsp freshly grnd black pepper
