- 8 ounce baby Yukon gold or possibly small new potatoes
- 16 x baby carrots peeled
- 1 lb thin asparagus trimmed and cut into 1 1/2-inch pcs (3 c.)
- 4 ounce sugar snap peas strings removed
- 8 sm radishes
- Â Â trimmed and halved lengthwise
- 1 Tbsp. extra virgin olive oil (orig was 3 tbsp)
- 4 x scallions trimmed and cut into1-inch pcs
- 10 ounce frzn fava beans thawed
- Â Â Or possibly baby lima beans
- 2/3 c. vegetable broth
- 1/4 c. minced fresh parsley
- 1 Tbsp. fresh lemon juice (optional)
- 1Â 1/2 tsp finely minced fresh tarragon
- 3/4 tsp salt
- 1/4 tsp freshly grnd black pepper
