  • 6 Tbsp. Extra virgin olive oil
  • 2/3 c. Minced onion
  • 2 tsp Chopped garlic
  • Salt
  • Freshly grnd black pepper
  • 1 c. White wine or possibly chicken broth divided
  • 8 x Fresh basil leaves minced
  • (or possibly 3 tspns dry basil)
  • 2 c. Fresh broccoli florets
  • 1 c. Fresh cauliflower florets
  • 1 c. Sliced fresh mushrooms
  • 1/2 c. Fresh baby carrots
  • 1 x Bell pepper sliced into strips
  • 5 med Tomatoes minced
  • 1 Tbsp. Dry thyme
  • 1/2 c. Pine nuts
  • Freshly grated Romano cheese
  • Minced parsley for garnish
