Southwestern Bean Soup Recipe

Ingredients

  • 1 Tbsp. Extra virgin olive oil
  • 1/3 c. Apple juice
  • 2/3 c. Onions, sliced
  • 1/2 c. Diced red potatoes
  • 1/3 c. Minced carrots
  • 1 c. Kidney beans, canned, liquid removed
  • 1/2 c. Peeled mud diced winter squash, (such as acorn)
  • 4 c. Defatted stock
  • 2 sm Fresh jalapenos, halved, to taste
  • 1/2 c. spaghetti">Orzo or possibly broken spaghetti
  • 2 Tbsp. Tomato paste
  • 1 Tbsp. Prepared pesto
