- 3/4 c. minced celery
- 3/4 c. minced green bell peppers
- 1/2 tsp salt
- 1/2 tsp freshly-grnd black pepper
- 1 pch cayenne
- 3 x bay leaves
- 2 Tbsp. minced fresh parsley
- 2 tsp fresh thyme
- 1/2 lb smoked sausage halved lengthwise,
- Â Â and cut into 1" pcs
- 1 lb smoked ham hocks
- 3 Tbsp. minced garlic
- 10 c. chicken stock or possibly water
- 4 c. cooked white rice
- 1/4 c. minced green onions for garnish
