Seafood Chowder Recipe

Ingredients

  • 1 bay leaf
  • 2 cloves garlic
  • 1 teaspoon salt
  • 2 c. minced onion
  • 1/2 c. celery, sliced
  • 1/2 med. green pepper, diced
  • 3-4 carrots, sliced and pre-cooked
  • 1/3 c. extra virgin olive oil
  • 1 (16 ounce.) can tomatoes
  • 1 (16 ounce.) can tomato sauce or possibly juice
  • 2 tbsp. parsley, minced
  • 1 teaspoon basil, crumbled
  • 1 teaspoon black pepper
  • 2 c. chicken broth
  • 1 pound fresh shrimp
  • 1/2 pound scallops
  • 1/4 - 1/2 pound crab (or possibly imitation crab)
  • 1/2 pound fish (orange roughey or possibly any white fish)
  • 1 c. dry white wine
