  • 4 Tbsp. extra virgin olive oil plus oil for brushing
  • 2 x 400g cans minced plum tomatoes
  • 150 ml white wine
  • 2 sprg thyme
  • 1 x level tbsp sundried tomato paste
  • 1 x level tsp caster sugar
  • 1 x salt and freshly grnd black pepper
  • 4 x long thin aubergines
  • 6 x level tbsp greek yogurt
  •     roasted red pepper salsa (qv)
  •     rocket leaves to serve
