Ingredients

  • 1 lb Tart apples, peeled and diced
  • 1/2 c. Coarsely minced dry apricots
  • 3/4 c. Cider vinegar
  • 1/2 x Lemon (zest & pulp prepared separately)
  • 3/4 c. Light-brown sugar, packed
  • 1/4 c. Chopped fresh ginger
  • 2 clv garlic, chopped
  • 1/2 c. Golden brown raisins
  • 2 x Shallots, minced
  • 2 1/2 tsp Salt
  • 1 pch Cayenne pepper
