• 1 c. leeks, white part only washed, minced

• 1 sm baking potato - (abt 1/2 lb) peeled, cubed
• 3 1/2 c. chicken stock
• 1 tsp lemon juice
•     Salt to taste
•     Freshly-grnd white pepper to taste
•     paprika optional
• 1/2 c. half and half or possibly light cream
•     Creme fraiche or possibly whipped cream for garnish
