Crepes Buffet Recipe

Ingredients

  • 1 c. all-purpose flour
  • 1 tsp salt
  • 6 x Large eggs beaten
  • 1 1/2 c. lowfat milk
  • 1/4 c. brandy (optional)
  •     (use additional lowfat milk if you omit it)
  • 4 Tbsp. melted butter
  • 2 Tbsp. butter
  • 2 Tbsp. all-purpose flour
  • 1 1/2 c. whole lowfat milk
  •     Salt to taste
  •     Freshly-grnd black pepper to taste
  •     Freshly-grated nutmeg to your taste
  • 1/4 tsp cayenne pepper
  • 1/4 c. heavy cream - (to 1/3)
  • 2 c. shredded sharp cheddar - (8-ounce brick)
  • 1/2 c. grated Parmigiano-Reggiano
  • 3 c. broccoli florets
  • 2 box minced frzn spinach defrosted, liquid removed
  • 1 lb thick-sliced baked ham from deli counter minced
  • 12 ounce cooked lump crabmeat
  •     (available fresh in plastic tubs at fish counter)
  • 1 Tbsp. extra-virgin extra virgin olive oil
  • 1/2 lb bacon minced
  • 1 x shallot minced
  • 1 lb mushrooms cleaned, sliced
  •     Salt to taste
  •     Freshly-grnd black pepper to taste
  • 2 can pitted black cherries - (16 ounce ea)
  • 1 x orange zested
  • 1 x cinnamon stick
  • 1 x rounded Tbsp. cornstarch
  • 3 Tbsp. hot water
  • 2 x jiggers Kirsch or possibly Amaretto liquer
  • 1/3 c. confectioners' sugar plus
  •     additional for dusting
  • 3 Tbsp. butter melted
