- 2 c. spinach coarsely minced
- 1/2 c. alfalfa sprouts
- 1/4 c. arugula minced or possibly fresh cilantro
- 2 c. cooked chicken in bite-sized pcs
- 2 c. asparagus
- 1/2 c. carrots slivered DRESSING:
- 2 Tbsp. yogurt
- 1 Tbsp. fresh lemon juice
- 1 Tbsp. nonfat mayonnaise (1 to 2)
- 1 tsp honey
- 1/2 tsp curry pwdr
- 1/2 tsp dry basil or possibly 2 tsp. fresh basil chopped
- 1 tsp scallions chopped (or possibly more, to taste)
- 1/4 tsp sea salt (optional)
- Â Â Fresh grnd black pepper to taste (optional)
