Simple Lobster Tartare Recipe

Ingredients

  • 2 lb Lobster, (cooked for four min)
  • 8 x Asparagus spears, trimmed
  • 1/2 x Cucumber, halved lengthwise and de-seeded
  •     Freshly grnd black pepper
  • 2 c. Extra virgin olive oil
  • 1 x Lime, Juice of
  •     Good handful of minced mixed herbs, such as basil, tarragon lemon balm
  • 1 x Hand of garlic, halved
  • 2 x Egg yolks*
  • 1 Tbsp. White wine vinegar
  • 1 tsp Grainy mustard
  • 5 x Anchovy fillets in oil, liquid removed and coarsely minced
  • 5 x Basil leaves, minced
  • 3/4 c. Extra virgin olive oil
  • 1 Tbsp. Warm water
  • 4 lrg Sprigs chervil
  •     Bread
