Gabriel's Stuffed Acorn Squash Recipe

Ingredients

  • 1 Tbsp. extra virgin olive oil, (1 to 2)
  • 1 1/2 c. mixed fresh vegetables, minced
  •     broccoli, cauliflower,
  •     zucchini, summer squash, snow peas or possibly
  •     scallions
  • 16 x carrot rounds
  • 16 x fresh mushroom slices
  • 1/2 tsp dry basil
  • 1/2 tsp dry oregano
  • 1/2 tsp dry thyme
  •     Salt and freshly grnd black pepper, to taste
  • 1 c. white wine
  • 2 tsp fresh lime juice, (2 to 4)
  • 2 x acorn squash, halved, seeded, &
  •     steamed
  • 4 tsp brown sugar, (4 to 8)
  • 8 ounce Gouda cheese, grated
