Emeril's Ploughmans Lunch Recipe

Ingredients

  • 1 lb veal round grnd
  • 1/2 lb pork butt grnd
  • 1/4 lb chicken livers grnd
  • 1/2 lb boiled ham cut 1/2" cubes
  • 2 x bay leaves
  • 1 1/2 tsp salt
  • 1/4 tsp dry thyme
  • 1/4 tsp dry oregano
  • 1 tsp freshly-grnd black pepper
  • 1/2 c. finely-chopped onions
  • 1 Tbsp. minced garlic
  • 1/2 c. brandy
  • 1/2 c. port wine
  • 1 x egg white
  • 2 Tbsp. minced parsley
  • 1 x recipe Pate Pastry Dough (see recipe)
  • 5 x soft-boiled Large eggs peeled
  • 1 x egg beaten
  • 1 loaf brown bread or possibly pumpernickel bread
  • 1 lb Maytag Farms blue cheese
  • 2 c. whole grain mustard
  • 1 c. cornichons
