- 1/2 lb boiled ham cut 1/2" cubes
- 2 x bay leaves
- 1Â 1/2 tsp salt
- 1/4 tsp dry thyme
- 1/4 tsp dry oregano
- 1 tsp freshly-grnd black pepper
- 1/2 c. finely-chopped onions
- 1 Tbsp. minced garlic
- 1/2 c. brandy
- 1/2 c. port wine
- 1 x egg white
- 2 Tbsp. minced parsley
- 1 x recipe Pate Pastry Dough (see recipe)
- 5 x soft-boiled Large eggs peeled
- 1 x egg beaten
- 1 loaf brown bread or possibly pumpernickel bread
- 1 lb Maytag Farms blue cheese
- 2 c. whole grain mustard
- 1 c. cornichons
