Chef Paul's Brisket Marinade, Mop, And Dipping Sauce Recipe

Ingredients

  • 1 1/2 c. Beef stock, Not bullion
  • 3/4 c. Red wine vinegar
  • 6 Tbsp. Worcestershire sauce
  • 1 Tbsp. Chipotle pwdr
  • 1 Tbsp. Onion pwdr
  • 2 Tbsp. Garlic pwdr
  • 3 Tbsp. Brown sugar
  • 1 tsp Cumin pwdr
  • 3/4 c. Oil
  • 3/4 c. Bourbon
  • 1 c. Reserved marinade
  • 6 ounce Beer
  •     Balance reserved marinade
  • 1 can Tomato sauce, 16 ounce.
  • 3 Tbsp. White vinegar
  • 2 Tbsp. Brown sugar
  • 1/2 c. Catsup
  • 1 tsp Mustard pwdr
  • 4 x Cloves garlic, or possibly 5, roasted
  • 1 med Onion, sliced and roasted
