Paella A La Valenciana (valencia Style Paella) Recipe

Ingredients

  • 24 x snails
  • 1/2 c. fine extra virgin olive oil or possibly lard approximately
  • 1 x young tender chicken cut into 8 pcs
  • 1/2 lb lean pork cut into cubes the s
  • 1/4 lb lean ham diced
  • 10 sm fresh sausages
  • 1 med onion minced
  • 2 x pimentos or possibly small green bell peppers minced small
  • 2 x tender artichokes cut lengthwise into quarters
  • 1 c. precooked white beans Navy, Great Northern, etc.
  • 2 x cloves garlic peeled and chopped
  • 2 sprg parsley chopped
  • 1 x bay leaf
  • 3 sm to medium tomatoes peeled and minced
  • 2 c. rice
  • 1 Tbsp. sweet red (Spanish) paprika
  • 4 c. stock or possibly water boiling
  • 1/2 c. peas cooked
  •     Salt
  •     Saffron
