  • 6 quart Water or possibly beef stock
  • 2 x Bay leaves
  • 3 ounce Dry tomatoes
  • 1 Tbsp. Sage
  • 1 tsp Oregano
  • 3 tsp Cayenne pwdr
  • 1 Tbsp. Black mustard seed, roasted
  • 1 Tbsp. Cumin seed, roasted
  • 1/2 c. Worcestershire sauce
  • 1/2 c. Nuoc mam
  • 1/4 c. Black pepper
  • 1/4 c. Warm paprika
  • 1/4 c. Grnd cumin
  • 4 lrg Chipotle peppers, torn into pcs
  • 2 lrg Jalapeno peppers, minced
  • 2 lb Fresh tomatoes, minced
  • 1 can (28-ounce) peeled tomatoes, minced
  • 12 ounce Tomato paste
  • 2 x Heads garlic, pressed
  • 2 lrg Yellow onions, minced
  • 4 Tbsp. Canola oil
  • 1 lb Kielbasa
  • 3 lb Grnd beef
  • 2 Tbsp. Dry shrimp
  • 1 c. Smoked oysters
  • 1/4 c. Honey
  •     Salt to taste
