Ken's French Onion Soup Recipe

Ingredients

  • 3 Tbsp. unsalted butter
  • 4 med red onion, thinly, sliced
  • 2 clv garlic, finely, minced
  • 1/2 c. dry red wine
  • 1 Tbsp. Dijon mustard
  • 1 Tbsp. balsamic vinegar
  • 1 tsp Worcestershire sauce
  • 1/2 tsp dry basil
  • 1/2 tsp dry thyme
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1 x bay leaf
  • 7 c. vegetable or possibly beef stock
  • 1 c. grated gruyere cheese
  •     grated parmesan cheese
