- 2 Tbsp. Butter or possibly margarine
- 1/4 c. All purpose flour
- 1 c. (4 ounces) almonds (I use unblanched)
- 1 Tbsp. Cornstarch
- 1 c. Superfine or possibly verifine sugar, divided (3/4 c. and 1/4 c.)
- 6 lrg Egg whites, room temperature
- 1/4 tsp Cream of tartar
- 1/8 tsp Salt
- 1/8 tsp Almond extract
- 2Â 1/2 tsp Pure vanilla extract, divided (1 tsp. and 1/2 Tbsp.)
- 1/2 c. Red currant jelly
- 1/4 c. Granulated sugar (depending upon sweetness of berries) (up to 1/2)
- 2 Tbsp. Water
- 1 quart (20 ounces) strawberries, hulled and halved
- 1Â 1/2 c. (3/4 pint) heavy cream, cool
- 3 Tbsp. Powdered sugar (preferably 10X)
