Ingredients

  • 1 1/2 c. Basmati rice
  • 1 Tbsp. Canola oil
  • 2 Tbsp. (heaping) Peeled and chopped fresh ginger
  • 1/2 c. Finely-minced carrot - (1 med carrot)
  • 2 c. Diagonally sliced green beans - (1/2 lb)
  • 1 lrg Red bell pepper seeded, and cut
  •     into thin, 1 1/2"-long pcs - (1 c.)
  • 5 x Scallions diagonally sliced
  • 1/4 c. Chopped fresh cilantro
  • 3/4 c. Coarsely-minced roasted cashews
  • 3 Tbsp. Tamari or possibly soy sauce
  • 3 Tbsp. Sesame oil
  • 1/4 c. Rice vinegar
  • 1/2 tsp Salt
