Shellfish Pot Pie Recipe

Ingredients

  • 2 1/4 c. Flour
  • 1/2 tsp Salt
  • 1/4 c. Cool unsalted butter cut into bits
  • 1/2 c. Cool vegetable shortening cut into bits
  • 1/4 c. Ice water
  • 1 x Egg lightly beaten with
  • 1 Tbsp. Water for egg wash
  • 9 Tbsp. Unsalted butter
  • 1 c. Finely-minced onions
  • 1/2 c. Sliced celery
  • 1/3 c. Chopped carrots
  • 1/4 lb Mushrooms sliced
  • 1 1/2 c. Bottled clam juice or possibly fish stock
  • 1/2 c. Dry white wine or possibly white vermouth
  •     Bouquet garni consisting of
  • 12 x Parsley sprigs tied together with
  • 1 tsp dry thyme plus
  • 6 x Peppercorns and also
  • 1 x Bay leaf in a cheesecloth bag
  • 1 lb Large shrimp peeled, deveined,
  •     and halved lengthwise
  • 1/2 lb Sea scallops halved if large
  • 1/2 lb Lump crab meat picked over
  • 1 1/2 c. Lowfat milk - (about)
  • 6 Tbsp. Flour
  • 1/4 c. Heavy cream
  • 1/4 c. Freshly-grated Parmesan cheese
  • 1/4 c. Chopped fresh parsley
  • 2 tsp Dijon mustard
  •     Freshly-grated nutmeg
  •     Lemon juice
  •     Salt to taste
  •     Freshly-grnd black pepper to taste
