Tomatoes Stuffed With Souffleed Goat Cheese And Savory Greens Recipe

Ingredients

  • 6 med Tomatoes, ripe
  •     Salt
  • 4 tsp Unsalted butter
  • 1 1/2 Tbsp. Shallots, chopped
  • 2 tsp Garlic, chopped
  • 1 1/2 Tbsp. All-purpose flour
  • 1/3 c. Half-and-half
  • 1 Tbsp. Dry sherry
  • 1/2 c. Fresh, soft cream cheese ((or possibly))
  •     Log-style goat cheese
  • 2 x Large eggs, separated
  • 3 Tbsp. Chives, chopped
  • 2 tsp Fresh savory or possibly tarragon, chopped
  •     Salt
  •     Freshly grnd white pepper
  • 3 c. Mixed savory baby greens, *see notes
  • 1/4 c. Lemon-Garlic Vinaigrette (recipe follows)
  •     Basil oil
