  • 1 Tbsp. Butter Or possibly Margarine
  • 1 1/2 c. Basmati Rice
  • 1 1/2 c. Unsweetened Coconut Lowfat milk
  • 1 3/4 c. Chicken Broth
  • 1/8 tsp Powdered Saffron
  • 1/4 tsp Salt
  • 1/2 c. Golden brown Raisins
  • 2 Tbsp. Lime Juice
  • 1 Tbsp. Fresh Cilantro, chopped
  • 1/3 c. Dry Roasted Peanuts, Divided, coarsely minced
  • 1 Tbsp. Vegetable Oil
  • 1 sm Onion, finely minced
  • 2 Tbsp. Fresh Ginger Root, finely chopped
  • 1/4 tsp Cayenne Pepper
  • 2 tsp Grnd Cumin
  • 1 tsp Grnd Coriander
  • 1 tsp Paprika
  • 1/2 tsp Cinnamon
  • 1/2 tsp Salt
  •     Fresh Grnd Pepper, to taste
  • 1 1/2 lb Chicken Breasts, Skinless & Boneless, cut into 1/2" strips
  • 1/2 c. Plain Lowfat Yogurt
  • 2 Tbsp. Lime Juice
