Ingredients

  • 1 lb onions finely minced
  • 1/3 c. walnuts pcs, minced
  •     extra virgin olive oil spray
  • 1 tsp herbes de Provence
  • 1/4 tsp fennel seeds optional
  •     salt
  •     freshly grnd pepper
  •     cinnamon large healthy pinch
  • 16 ounce eggplant or possibly more
  • 8 ounce zucchini or possibly less
  • 1 lb tomatoes peeled
  • 2 x cloves garlic chopped
  • 1/4 c. minced parsley or possibly more to taste
  •     salt and pepper optional
  • 2 c. skim lowfat milk
  • 1/4 c. nonfat dry lowfat milk pwdr (or possibly 2-c. 1%-lowfat milk)
  • 2 Tbsp. unbleached flour
  • 1 tsp canola oil or possibly
  •     diet margarine (2 to 3 tsp)
  • 2 x Large eggs or possibly equivalent
  • 1/2 c. grated parmesan cheese
  • 1/4 tsp nutmeg freshly grated
  • 1 Tbsp. fresh lemon juice
  •     lemon zest to taste
  • 1 lb potatoes thinly sliced
  • 1 Tbsp. diet margarine or possibly
  •     extra virgin olive oil or possibly
  •     unsalted butter
