Floating Watercress Souffles With Tomato Salad Recipe

  • 15 gm Unsalted butter, plus extra for greasing
  • 1 Tbsp. Plain flour
  • 50 ml Lowfat milk
  • 1 whl nutmeg
  • 1 x 50 grams pac fresh watercress
  • 2 x Large eggs
  • 50 gm Gruyere or possibly Cheddar
  • 300 ml Double cream
  • 2 x Plum tomatoes
  • 4 x Vine-ripened tomatoes
  • 100 gm Cherry tomatoes
  • 2 Tbsp. Extra virgin extra virgin olive oil
  • 1 tsp Balsamic vinegar
  • 1 sm Hand fresh basil
  •     Salt and freshly grnd black pepper
