  • 1 whl bluefish - (2 to 3 lbs) cleaned
  • 3/4 tsp cayenne
  • 3/4 tsp turmeric
  • 1 1/4 tsp salt
  • 1 1/2 tsp ghee or possibly unsalted butter (see below)
  • 2 Tbsp. broken cashews
  • 2 Tbsp. golden brown raisins
  • 1/3 c. vegetable oil plus
  • 1 Tbsp. vegetable oil
  • 4 c. sliced onions
  • 1 Tbsp. finely-minced garlic
  • 1 Tbsp. finely-minced ginger
  • 2 x fresh green chiles split lengthwise
  • 4 tsp coriander
  • 1 tsp cumin
  • 1/2 tsp Garam Masala (see below)
  • 1 c. minced tomato
  • 1 tsp freshly-squeezed lime juice
  • 1/4 c. minced fresh cilantro
  • 1/4 c. minced fresh mint leaves
  • 1/2 tsp sugar
  •     Cilantro sprigs for garnish
  •     Mint sprigs for garnish
  • 1/2 c. unsalted butter - (1 stick)
  • 4 whl star anise pcs
  • 2 tsp fennel seeds
  • 2 tsp grnd cinnamon
  • 2 tsp grnd cloves
  • 2 tsp grnd cardamom
  • 1 tsp grnd nutmeg
