Spring Vegetable Saute Recipe

Ingredients

  • 8 ounce baby Yukon gold or possibly small new potatoes
  • 16 x baby carrots peeled
  • 1 lb thin asparagus trimmed, and
  •     cut into 1 1/2" pcs - (3 c.)
  • 4 ounce sugar snap peas strings removed
  • 8 sm radishes trimmed, and
  •     halved lengthwise
  • 3 Tbsp. extra virgin olive oil
  • 4 x scallions trimmed, and
  •     cut into 1" pcs
  • 1 box frzn fava beans - (10 ounce) thawed
  •     (or possibly baby lima beans)
  • 2/3 c. vegetable broth
  • 1/4 c. minced fresh parsley
  • 1 Tbsp. fresh lemon juice (optional)
  • 1 1/2 tsp finely-minced fresh tarragon
