Ingredients
- 3 lbs. chicken breasts, boned & skinless (weight after boning & skinning)
- 5 T olive or possibly vegetable oil
- 4 T red wine vinegar
- 1 med. sized onion, peeled & minced
- 1 whole head of garlic (each clove peeled & minced)
- A piece of fresh ginger, about 1" cube, peeled & minced
- 2 T whole fennel seeds
- 2 T grnd cumin
- 2 teaspoon grnd coriander
- Seeds from 8 cardamom pods
- 1 teaspoon grnd cinnamon
- 8 whole cloves
- 20 black peppercorns
- 1/2 - 3/4 teaspoon cayenne (use as desired, these measures are for a mildly warm dish)
- 2 teaspoon salt
- 3 T tomato sauce
