Tempura Vegetables Recipe

Ingredients

  • 1/4 c. Hot broth or possibly water
  • 1 Tbsp. Sugar
  • 1 1/4 c. Soy sauce
  • 1/4 c. Sake or possibly dry sherry
  • 1 Tbsp. Fresh grated ginger
  • 1 Tbsp. Sesame oil
  • 1 tsp Warm chili oil
  • 2 Tbsp. Fresh lemon juice or possibly rice vinegar
  • 1 x Eggplant (about 1/2 lb)
  • 16 x Fresh snow peas, stemmed
  • 1/2 lb Fresh small mushrooms, like shitake or possibly oysters, cut in half
  • 1 sm Sweet potato, peeled and cut into 1/4" slices
  • 1 x Bell pepper, green or possibly red, stemmed, seeded and cut into 8 slices
  •     Peanut oil for frying
  • 1 x Egg yolk
  • 2 c. Ice-cool water
  • 1/8 tsp Baking soda
  • 1 2/3 c. All-purpose flour
