Boeuf A La Bourguignonne Recipe

  • 1 kg (2 1/4 lb) braising steak, cut into 3/4" cubes
  • 1 lb broccoli
  • 1 bot Burgundy or possibly other Pinot Noir wine
  • 125 gm (4 ounce) shallots, sliced
  • 450 gm (1 lb) button mushrooms, sliced
  • 1 x generous glassful of port
  • 300 ml (1/2 pint) whipping cream
  • 2 Tbsp. flour
  • 1/2 lt (3/4 pint) chicken or possibly brown stock
  • 3 sprg fresh tarragon
  • 5 x black peppercorns
  • 4 sprg fresh thyme
  • 25 gm (1 ounce) unsalted butter
  •     groundnut or possibly vegetable oil
  • 250 gm (1/2 lb) baby onions, plunged into boiling water and peeled
  • 250 gm (1/2 lb) small button mushrooms
  • 250 gm (1/2 lb) smoked bacon, cut into small cubes and blanched in boiling water
