- 1 kg (2 1/4 lb) braising steak, cut into 3/4" cubes
- 1 lb broccoli

- 1/2 lt (3/4 pint) chicken or possibly brown stock
- 3 sprg fresh tarragon
- 5 x black peppercorns
- 4 sprg fresh thyme
- 25 gm (1 ounce) unsalted butter
- Â Â groundnut or possibly vegetable oil
- 250 gm (1/2 lb) baby onions, plunged into boiling water and peeled
- 250 gm (1/2 lb) small button mushrooms
- 250 gm (1/2 lb) smoked bacon, cut into small cubes and blanched in boiling water
