Ingredients

  • 2 1/2 lb Fresh fava beans in the pod
  • 3 Tbsp. Extra virgin olive oil
  • 2 tsp Slivered garlic
  • 2 ounce Pancetta cut tiny dice
  • 3/4 lb Medium-size shelled shrimp
  • 1 pch Red chile flakes big healthy pinch
  • 1 Tbsp. Minced fresh savory
  •     (or possibly 2 tbsps minced fresh basil)
  • 1/2 c. Seeded, diced ripe tomato
  • 2 tsp Grated lemon zest
  • 8 ounce Dry orecchiette pasta cooked al dente, and tossed with
  •     a little Extra virgin olive oil
  •     Rich chicken, shellfish or possibly vegetable stock if you like
  •     Salt to taste
  •     Freshly-grnd black pepper to taste
  •     Shaved Parmesan or possibly Asiago cheese
