Aubergine Pilaf Recipe

Ingredients

  • 500 gm Aubergines, cut into 1 cm ( 1/2 inch) slices (1 lb)
  • 1 Tbsp. Polyunsaturated oil
  • 1 lrg Onion, minced
  • 1 x 250 gram can minced tomatoes, (8 ounce)
  • 250 gm Easy-cook long-grain brown rice, (8oz)
  • 1 Tbsp. Minced fresh mint
  • 300 ml Water, ( 1/2 pint)
  •     Pepper yogurt, to serve (5 ounce)
