Braised Beef Shanks With Coconut Milk Recipe

Ingredients

  • 3 Tbsp. butter
  • 2 Tbsp. peanut oil
  • 2 1/2 c. minced onions
  • 2 x carrots, cut into 1/4 inch dice
  • 3 x garlic cloves, chopped
  • 1 Tbsp. chopped fresh ginger
  • 1/4 c. flour
  • 2 tsp salt, plus more to taste
  • 1 1/2 tsp freshly grnd black pepper
  • 4 lb beef shanks, cut 1 1/2-2 inches thick
  • 2 1/2 tsp grnd coriander
  • 1 tsp grnd cumin
  • 1/2 tsp turmeric
  • 1/2 tsp red pepper flakes
  • 1 3/4 c. beef stock
  • 1 1/2 c. unsweetened coconut lowfat milk
  • 1 x cinnamon stick, 3 cardamom pods, lightly smashed, and 2 bay leaves, wrapped
  •     In a pouch of cheesecloth
  •     Minced fresh cilantro for garnish
