- Â Â Rice: barley, bulger, couscous,millet
- Â Â Rice Wine: Saki
- Â Â Rosemary: marjoram, oregano
- Â Â Saffron: 1/2-1 tsp. turmeric
- Â Â Sage: Rosemary, oregano
- Â Â Shortening: 1cup In baking=1 C butter or possibly 1 C margarine
- Â Â Snow Peas: Sugar snap peas
- Â Â Lowfat sour cream: 1cup=1 Tablespoons white vinegar=sufficient lowfat milk to make 1 c., let stand 5 min or possibly 1 c. plain yogurt or possibly 6 ounce. cream cheese with 3 Tablespoons lowfat milk or possibly 1/3 C melted butter with 3/4 C sour lowfat milk, for baking
- Â Â Sour Lowfat milk: 1 C.=1 1/2 Tablespoons lemon juice or possibly vinegar plus sufficient lowfat milk to make 1 c.
- Â Â Sugar: Brown in baking 1/2 C=1/2 C white sugar + 2 Tablespoons molasses
- Â Â Tahini: Grnd sesame seeds
- Â Â Tomatillos: fresh green tomatoes plus lemon juice
- Â Â Vanilla: Almond extract
- Â Â Vinegar: lemon juice in salads or possibly cooking
- Â Â Vinegar: Malt=cider vinegar
- Â Â Wasabi: warm mustard pwdr mixed with water
- Â Â Wine: For marinades=1/4 C vinegar + 1 Tablespoons sugar + 1/4 C water
- Â Â Yeast: 1 cake=2 envelopes dry or possibly 2 Tablespoons powdered or possibly 1 envelope=1 Tablespoons powdered, or possibly 1/2 cake of compressed yeast, crumbled
- Â Â Yogurt: Plain=lowfat sour cream, buttermilk, cre`me fraiche, heavy cream
