Black Beans
1 cup black beans
6 cups water
1 teaspoon sea salt
1 bay leaf
Chili
1 tablespoon olive oil
1 large shallot, chopped
2 garlic cloves, chopped
1 red bell pepper, cored, seeded and chopped
4 tomatillos, husked, cleaned and chopped
1 teaspoon sea salt
1/2 teaspoon ground black pepper
1 teaspoon dried oregano
1 teaspoon ground coriander
2 teaspoons ground cumin
2 teaspoons chili powder (mine is a bit on the hot side)
1 (15 oz.) can red kidney beans, drained and rinsed
1 (28 oz.) can crushed tomatoes
1/2 cup bittersweet chocolate chips (I like Ghirardelli)
Garnishes
Chopped fresh cilantro
Sliced avocado
Shredded Monterey Jack cheese
Sour cream or plain yogurt
Toasted corn or flour tortillas for scooping
