  • 400g Fresh Kway Teow or enough dry flat rice noodles for 2 portions
  • 2 Cloves garlic, minced
  • 3 green chillies, de-seeded and chopped
  • 1 lime, juiced
  • rind of half the same lime, grated
  • 2 heads of pak choi, roots discarded and green part chopped lengthways
  • handful of beansprouts
  • bunch of scallions, finely chopped
  • sesame oil
  • soy sauce
  • mirin
  • salt and pepper
