Ingredients

Ingredients For the hummus
  • 125g/4oz baby beetroot

  • 25g/1oz walnuts

  • 1½ tsp cumin seeds

  • 1 tbsp dry white breadcrumbs

  • 1½ tsp tahini

  • 1 garlic clove

  • ½ lemon, juice only

  • 1 tbsp walnut oil

  • 1½ tsp sunflower oil

  • 1½ tsp sherry vinegar

  • 2 Little Gem lettuce leaves

  • sea salt and freshly ground black pepper

For the vegetable stock
  • 1 onion, chopped

  • 2 carrots, chopped

  • 2 celery sticks, chopped

  • 1 bulb garlic, halved

  • 1 fennel bulb, chopped

  • 5 peppercorns

  • salt

  • bay leaf

  • sprig rosemary

  • sprig thyme

For the soup
  • 1 tbsp olive oil

  • knob of butter

  • 1 large onion, chopped

  • 1 garlic clove, chopped

  • 375g/13oz beetroot, peeled, chopped

  • 2 apples, peeled, chopped

  • 1 large tomato

  • 400ml/14fl oz vegetable stock

  • sea salt and freshly ground black pepper

  • 1 tbsp crème fraîche

For the tarte tatin
  • 2 baby beetroot

  • 125g/4oz plain flour

  • 125g/4oz wholemeal flour

  • 70g/2½oz unsalted butter, plus extra for greasing

  • 25g/1oz cheddar cheese, grated

  • 4 sprigs thyme

  • 1 free-range egg yolk

  • 2 tbsp balsamic vinegar

  • 30g/1oz sugar

  • salt and freshly ground black pepper

For the horseradish cream
  • 75g/2½oz fresh horseradish

  • 150ml/5fl oz soured cream

  • 10g/½oz sugar

  • squeeze lemon juice

  • 2 tsp chopped fresh dill
