Honey-roasted Duck Breast With Couscous And Red Pepper Sauce

Ingredients

Ingredients For the honey-roasted duck breast
  • 1 duck breast, trimmed (keep trimmings)

  • salt and freshly ground black pepper

  • 1 tbsp clear honey

  • 1 tsp balsamic vinegar

For the duck stock
  • reserved duck trimmings

  • 1 star anise

  • pinch dried chilli flakes

  • pinch salt

  • 300ml/½ pint boiling water

For the couscous
  • 10g/3½oz couscous

  • pinch dried chilli flakes

  • ½ cinnamon stick

  • small handful fresh mint, finely sliced

  • 55g/2oz dried apricots, chopped

  • ¼ red pepper, chopped

  • salt and freshly ground black pepper

For the red pepper sauce
  • dash olive oil

  • 1 red pepper, deseeded and finely chopped

  • 1 clove garlic, peeled and finely chopped

  • 55g/2oz dried apricots, chopped

  • 2 tsp red wine vinegar

  • 2 tsp balsamic vinegar

  • salt and freshly ground black pepper

To serve
  • fresh mint leaves, to garnish
