Cajun-style Salmon With Salmon Crisps And Thai-style Noodles

Ingredients

Ingredients For the Thai-style noodles
  • 1 tbsp vegetable oil

  • 1 garlic clove, chopped

  • ½ red chilli, finely chopped

  • ½ head broccoli, cut into florets, blanched and drained

  • 100g/3½oz medium egg noodles, cooked according to packet instructions and drained

  • small handful fresh coriander, chopped

  • 2 tbsp clear honey

  • 2 limes, juice only

  • 1 tsp sesame oil

For the Cajun-style salmon
  • 2 black peppercorns

  • ¼ tsp cumin seeds

  • ¼ tsp coriander seeds

  • ½ tsp paprika

  • ¼ tsp cayenne pepper

  • 100g/3½oz salmon fillet, skin on

  • 2 tsp vegetable oil

For the salmon crisps
  • vegetable oil, for deep frying

  • salmon skin (see below)
