Ingredients For the potato topping
  • 1kg/2lb 4oz potatoes, peeled and cut into 2cm/¾in chunks

  • 25g/1oz butter

  • 75ml/3fl oz milk

  • sea salt and freshly ground black pepper

For the filling
  • 6 quails' eggs

  • 300g/11oz salmon fillets, skin and bones removed, cut into 5cm/2in chunks

  • 300g/11oz un-dyed smoked haddock fillets, skin and bones removed, cut into 5cm/2in chunks

  • 125g/4½oz raw, peeled king prawns

  • 150g/5oz good quality Cheddar, coarsely grated

  • 2 celery stalks, coarsely grated

  • 1 carrot, peeled and coarsely grated

  • large handful fresh spinach, chopped

  • 4 sprigs fresh flatleaf parsley, stalks and leaves finely chopped

  • 4 sprigs fresh dill, finely chopped

  • ½ red chilli, seeds removed, finely chopped

  • 1 lemon, juice and finely grated zest

  • 2-3 tbsp olive oil

  • 150ml/5fl oz double cream

  • 50ml/2fl oz crème fraîche
