Daube Of Beef With Colcannon, Dauphinoise Potatoes, Roasties And Dulse Laverbread

Ingredients

Ingredients For the dauphinoise potatoes
  • 1 tsp olive oil

  • 1kg waxy potatoes, such as Charlotte or Sunbeam, peeled, sliced on a mandoline

  • sea salt flakes and freshly ground black pepper

  • 3 garlic cloves, peeled, finely sliced

  • 200g/7oz hard cheese, preferably Irish

  • freshly grated nutmeg, to taste

  • 500ml/17fl oz double cream

  • knob of butter

For the daube of beef
  • 2 beef shins

  • 4 tbsp olive oil

  • 2 tbsp plain flour, seasoned with salt and freshly ground black pepper

  • 1 carrot, peeled, finely chopped

  • 1 celery stalk, trimmed, finely chopped

  • 1 onion, peeled, finely chopped

  • 2 garlic cloves, crushed to a paste with the edge of a knife

  • knob of butter

  • 12 shallots or baby onions

  • 12 button mushrooms

  • 1 star anise

  • 1 cinnamon stick

  • 1 bouquet garni (1 sprig thyme, 1 bay leaf, 1 sprig parsley, tied together with kitchen string)

  • 400ml/14fl oz good quality red wine

  • 50ml/2fl oz Madeira

  • 400ml/14fl oz beef stock

  • 1 orange, zest and juice

  • 1 tbsp redcurrant jelly

  • sea salt flakes and freshly ground black pepper

For the roasties
  • 8-12 potatoes (such as Sunbeam or Aaron Victory), peeled and cut into barrel shapes

  • 180g/6oz goose fat

  • 2 tbsp semolina

  • sea salt and freshly ground black pepper

  • small handful smoked dulse (available from online suppliers)

For the colcannon
  • 1kg/1lb 2oz floury potatoes, such as Maris Piper or King Edward, peeled, chopped

  • 1kg/1lb 2oz spring cabbage, cores removed, leaves finely shredded

  • 150ml/5fl oz double cream

  • 2 shallots, peeled, sliced

  • 1 tbsp chopped fresh chives

  • 125g/4½oz butter

  • salt and freshly ground black pepper

For the dulse laverbread
  • 400-500ml/14-17fl oz chicken stock

  • handful dulse, very finely shredded

  • 2tsp olive oil

  • 150g/5oz unsmoked streaky bacon, chopped into lardons

  • knob of butter

  • 1 tbsp chopped fresh chives, to serve
