1 orange, zest and juice
1 tbsp redcurrant jelly

8-12 potatoes (such as Sunbeam or Aaron Victory), peeled and cut into barrel shapes
180g/6oz goose fat
2 tbsp semolina
sea salt and freshly ground black pepper
small handful smoked dulse (available from online suppliers)
1kg/1lb 2oz floury potatoes, such as Maris Piper or King Edward, peeled, chopped
1kg/1lb 2oz spring cabbage, cores removed, leaves finely shredded
150ml/5fl oz double cream
2 shallots, peeled, sliced
1 tbsp chopped fresh chives
125g/4½oz butter
salt and freshly ground black pepper
400-500ml/14-17fl oz chicken stock
handful dulse, very finely shredded
2tsp olive oil
150g/5oz unsmoked streaky bacon, chopped into lardons
knob of butter
1 tbsp chopped fresh chives, to serve
