Ingredients For the tempura
  • 150g/5½oz self-raising flour

  • pinch salt

  • 300ml/10fl oz sparkling water

  • 5 ice cubes

  • vegetable oil, for deep frying

  • 2 courgette flowers

  • 85g/3oz trout,skin removed, cut into small diamond shapes

  • 2 tbsp cornflour

For the lemon soy dressing
  • ½ lemon, juice only

  • 3 tbsp soy sauce

To serve
  • 1 bunch roasted cherry tomatoes on the vine
