Turkey And Pistachio Meatballs With Stilton Dumplings

Ingredients

Ingredients For the meatballs
  • 50g/1¾oz fresh breadcrumbs

  • 50g/1¾oz pistachios, shells removed, chopped

  • 100g/3½oz turkey breast, chopped

  • 1 free-range egg, beaten

  • small handful fresh chives, chopped

  • salt and freshly ground black pepper

  • 1-2 tbsp olive oil

For the sauce
  • 85g/3oz butternut squash, peeled, cut into 1cm/½in cubes

  • 25g/1oz butter

  • 50ml/2fl oz white wine

  • 75ml/2½fl oz double cream

  • 1 tsp wholegrain mustard

  • salt and freshly ground black pepper

For the Stilton dumplings
  • 150g/5½oz plain flour, plus extra for dusting

  • 1 tsp baking powder

  • 50g/1¾oz cold butter, cut into cubes

  • 85g/3oz Stilton, crumbled

  • 30ml/1fl oz milk

  • salt and freshly ground black pepper
