Sirloin Steak With Stir-fried Chorizo, Sweetcorn, Onions And Potatoes With Tartare Sauce

Ingredients

Ingredients For the potatoes
  • 4 medium floury potatoes, such as Maris Piper or King Edward, peeled, washed and cut into quarters

  • 300g/10½oz sweetcorn kernels

  • 2 tbsp olive oil

  • 1 medium onion, chopped

  • 3 chorizo sausages, cut into 1cm/½in cubes

For the tartare sauce
  • 2 free-range egg yolks

  • pinch salt

  • ½ tsp Dijon mustard

  • 1 tbsp white wine vinegar

  • 200ml/7fl oz sunflower oil

  • 25ml/1fl oz olive oil

  • salt and freshly ground black pepper

  • 1 tbsp gherkins, finely chopped

  • ½ tbsp capers, drained, rinsed, finely chopped

  • 2 tbsp finely chopped fresh parsley

  • 1 tbsp finely chopped fresh marjoram

  • 1 tbsp finely chopped fresh coriander

  • 1 lemon, juice only

For the steak
  • 2 tbsp sunflower oil

  • 4 x 200g/7oz sirloin steaks
