Spiced Lamb Chops With Cannellini Beans, Mint And Yoghurt Dressing And Red Pepper Purée

Ingredients

Ingredients For the spiced lamb chops
  • 1 tbsp olive oil

  • ½ tsp garam masala

  • ½ tsp ground cumin

  • ½ tsp coriander seeds, toasted and ground

  • squeeze lemon juice

  • salt and freshly ground black pepper

  • 4-6 lamb loin chops, trimmed and bone removed, or 4 lamb noisettes

For the cannellini beans
  • 2 tbsp olive oil

  • 1 red pepper, deseeded and finely chopped

  • 2 tsp red wine vinegar

  • pinch dried chilli flakes

  • 1 garlic clove, peeled and finely chopped

  • 200g/7oz can cannellini beans, drained and rinsed

  • salt and freshly ground black pepper

  • small handful fresh mint, chopped

For the mint and yoghurt dressing
  • 150ml/¼ pint natural yoghurt

  • 2 garlic cloves, finely chopped

  • 3 tbsp fresh mint, chopped

  • 1 lemon, zest and juice only

  • salt and freshly ground black pepper

For the red pepper purée
  • 1 tbsp olive oil

  • 2 red peppers, deseeded and roughly chopped

  • 2 garlic cloves

  • 1 tbsp balsamic vinegar

  • salt and freshly ground black pepper
